Peach Jalapeno Cornbread

When I married my southern hubby, I had to change my understanding of cornbread. He likes it sweet. So I am always trying to marry my northern roots with his southern traditions (and avoid dumping 2/3 cup sugar into mix!).

Adding fresh seasonal fruit to my cornbread recipe does the trick. Here I added jalapeños and summer ripe peaches. I also love to add plums.

Follow whatever cornbread recipe you love....but to liven it up:

To dry ingredients add:

  • 1 diced peach
  • 1 seeded & ribbed minced jalapeño

Toss the add-ins to coat (so they don’t fall to bottom during cooking). Adjust cooking time...I cook as recipe indicates but add an additional 5 mins with loose aluminum foil to protect top from browning too much. My grandma’s cornbread recipe will be posted on blog....but seriously take your go-to and experiment adding stuff in (savory too...scallions, cheeses, etc. have fun!).
