Braised Brisket with Good People Brewing Co. Snake Handler

Ingredients

  • 2 T unprocessed cocoa powder

  • 2 T finely ground coffee

  • 1 T + 1 t kosher salt

  • 3 T garlic powder

  • 2 t black pepper

  • 2 T brown sugar

  • ½ t cayenne, or to taste

  • ½ t ground cloves

  • ½ t cinnamon

Mix all ingredients (extra can be stored in airtight container for future use)

  • 1-2 T olive oil

  • 4-6 lb brisket

  • 2 onions, thinly sliced

  • 2 12 oz cans Good People Snake Handler IPA

  • Salt to taste

Instructions

  1. Brush brisket with thin coat of olive oil.  Sprinkle spice mixture over entire brisket and rub into meat, even in the crevices.  Coat completely. Wrap in plastic. Refrigerate Brisket for 1-2 days.

  2. Remove brisket from refrigerator and allow it to sit at room temperature up to one hour.  Preheat oven to 300.

  3. While oven preheats, thinly slice the onions.  Scatter onion slices along bottom of large roasting pan.  Place brisket, fat side up, on top of onions.

  4. Pour 2 cans of Good People Snake Handler IPA in roasting pan.  Make certain brisket is not submerged. Liquid should be no more than half way up the brisket.  Seal tightly with foil.   Place the brisket in the oven and allow it to cook for 4-5 hours, until tender. Internal thermometer should read 130-135 for medium.  

  5. Remove from oven.  Turn broiler on. Remove foil and return brisket to the oven.  Broil it to crisp the top, about 5 mins. Remove from oven and allow it to rest for at least 10 mins. Shred or slice the meat.  Make certain you slice against the grain.

  6. Top meat with onions and ladle cooking liquids over the top.  Add salt to taste if desired.

  7. Serve with an ice cold Snake Handlers and enjoy!
