Easy Greek Salad

Sometimes you just have to throw together a Greek Salad. Doesn’t seem to be the time for Romaine😳, so I opted for baby arugula as the base.

Cut up a beautiful heirloom tomato, sliced Spanish onion, cucumbers, crumbled feta, a scoop of hummus, some leftover roast chicken, a mix of Greek olives.

Seasoned with oregano, salt and pepper. Dressed with extra virgin olive oil, a squeeze of lemon and red wine vinegar. 

It really is that easy.
