Game Day Chili with Good People Coffee Oatmeal Stout

Ingredients:

  • 2 Poblano peppers
  • 1 red bell pepper
  • 1 jalapeno
  • 2 t + 1 T Olive oil, divided
  • 1 T coriander seeds
  • 1 t cumin seeds
  • 1 t mustard seeds
  • 1 ½ t chipotle chili powder
  • 1 t Mexican oregano
  • 2 garlic cloves
  • 14.5 oz can whole peeled tomatoes, drained
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 red onion, diced
  • 1 cup diced raw bacon
  • 2 cups stock (chicken or bone broth)
  • 1 ¼ cups brewed coffee
  • 1 can Good People Coffee Oatmeal Stout
  • ½ cup crushed tortilla chips
  • ¼ cup fresh cilantro
  • Salt and pepper to taste

Optional:  you can add an additional 14.5 oz can whole peeled tomatoes, drained or a pint of halved fresh grape/cherry tomatoes (to kick it up a notch feel free to roast the tomatoes)

Instructions:

Pre-heat oven to 425 degrees.  

Roasted Pepper Puree:

  1. Line baking sheet with parchment or foil.  Cut off top of each pepper to remove stem. Slice peppers in half lengthwise.  Remove seeds and ribs. On lined baking sheet, drizzle peppers with 2 t olive oil, a little salt and pepper. Toss to coat.  Lay each pepper skin side up. Roast until skins are charred and blistered, about 30-40 mins. Remove and allow to cool.

  2. In bottom of dutch oven, combine the coriander, cumin and mustard seeds.  Over medium low heat, toast. About 3-5 mins. Turn heat off. Place seeds in a coffee grinder and grind seeds to powder.  Combine ground spices with the chipotle chili powder and oregano.

  3. In blender or food processor, add whole garlic cloves, roasted peppers, seasoning blend and 14.5 oz can of drained tomatoes.  Puree. Set aside.

Chili:

  1. In bottom of same dutch oven, heat over medium high heat (about 1 min).  Add remaining olive oil (1 T) and ground beef. Cook, stirring to break up until brown.  Approximately 5-8 mins. While beef is cooking, dice red onion and bacon, mince garlic. Remove beef from pot.  Repeat process with ground pork. (If desired, season meat with salt and pepper as it cooks).

  2. Add onion and bacon to pot.  Cook, stirring occasionally, until golden about 8 mins. Add minced garlic.  Cook 1 min.

  3. Return brown beef and pork to pot. Pour roasted pepper puree over top.  Give a good stir to combine. Heat 2 mins. Add 2 cups of stock, 1 ¼ cups brewed coffee, 1 can of Good People Coffee Oatmeal Stout, and ½ cup crushed tortillas.  Give a good stir and bring to a boil. Turn heat down to a simmer. Add cilantro and simmer, partially covered, 1 hour.

Adjust seasonings.  If chili too thick, add additional stout to desired consistency.  

Serve immediately.  Serves 6 generously.  

Top as desired:  pico de gallo, fresh cilantro, lime, sour cream, guacamole, shredded cheese, chopped red onion, fresh diced peaches or mango, crushed tortilla chips.
