The Best Jicama Slaw

The perfect topping to elevate any taco. Light, bright, and lovely. My favorite with grilled halibut or shrimp.

Ingredients:

  • 1 medium jicama (approximately 1 lb), peeled and julienned (you can also shred in a food processor)

  • 1/2 red onion, diced

  • 2 scallions, thinly sliced into green

  • 2-3 carrots, julienned

  • 1/2 c chopped fresh cilantro

  • 1 jalapeno, seeded and minced

  • 1/4 c + 2 T mayonnaise

  • Zest & juice from 2 limes

  • 1/4 t kosher salt

  • 1/8 t fresh ground pepper

Directions:

  • In a large mixing bowl, add all the veg (jicama through jalapeño).

  • In a small measuring cup, add your mayonnaise, zest, juice, salt & pepper. Whisk to combine. Taste and adjust flavor as desired.

  • Pour the dressing over the veg. Stir to combine and coat. Cover and refrigerate one hour to allow flavors to develop.
