No Bake Pumpkin Pie Bites

  • 1/2 cup pumpkin purée

  • 6 Medjool dates, pitted

  • 1/4 cup rolled oats

  • 1/4 cup nut butter

  • 3 T chia or flax seeds

  • 1/2- 3/4 cup pecans or walnuts, divided

  • 2 T pumpkin pie spice (Dak’s)

  • Optional: 1 t maple syrup or honey 


In the bowl of a food processor, grind 1/4 to 1/2 cup of nuts well.  Place ground nuts on a flat plate and set aside.  

Put all of the ingredients, just the remaining 1/4 cup of the nuts, in the bowl of the same food processor.  Pulse until well combined.  Place contents in refrigerator to chill 5-15 minutes. 

Roll a tablespoon size amount into a ball. Roll the ball in the ground nuts. Continue until dough is gone.  Makes approximately 12-15.  Cover and refrigerate at least 1 hour to allow flavors to combine.  Enjoy.

Can be stored up to two weeks. Or in the freezer in an airtight container for a month.
