The magic of water, potato and leek. You have my ❤️Julia Child.
- 2 quarts water
- 3-4 cups peeled, diced potato
- 3 cups thoroughly washed, chopped leek (to pale green)
- 1 tbsp salt
- In a stock pot, bring all ingredients to a simmer.
- Partially cover and allow to simmer 40-50 mins.
- With an immersion blender, blend to smooth (I leave a few chunks of potato).
- Ladle into bowls, a pat of grass fed butter and a little fresh pepper.
